Easy Steak Seasoning

Let’s chat about steak seasoning! Everyone has their own option, and I’m going to give you a dry rub and a marinade recipe.

When I was young my darling grandfather would host “Steak Nights” for our family. He grilled the BEST steaks! In fact, after he died multiple people wrote in and said “Still remember his amazing steaks!”

I found his recipe recently and wanted to share it so you could host your own steak night.

You’ll need a jar of Montreal Steak Seasoning.

This is a great all-purpose seasoning blend that packs a punch! It’s not spicy, although if you like spicy they do have a spicy version.

It’s got black pepper, salt, garlic and onion flakes, salt, and a little red pepper flakes.

If you want to make your own just mix equal parts black pepper, kosher salt, garlic powder, onion powder, and paprika in a small bowl. Whisk together until evenly incorporated, and use it anywhere you want to!

I store mine in an airtight container and sprinkle on vegetables before roasting! Super delish.

Papa’s steak seasoning is Montreal steak seasoning mixed with Worcestershire sauce, soy sauce, and lemon juice.

When the steaks were thawing he would squeeze his little bottle of (fake!) lemon juice over them. He always said it helped.

Now, if you want to create your own amazing steak seasoning, here are a few amazing flavor profiles to consider:

Brown Sugar creates a really good crust on your steak. Since it’s sugar, it caramelizes and helps give you those iconic grill marks if you’re making grilled steak, or just gives you a nice sear on the stovetop.

Smoked paprika, cayenne pepper, and chili powder are great if you’re using skirt steak or something that you are slicing and eating rolled up in a tortilla or over rice.

For a ribeye steak, here’s the steak seasoning blend I would use:

1 part brown sugar

1 part kosher salt

1/2 part black pepper

1/2 part garlic powder

1/2 part onion powder

For a filet mignon, I just use flaky sea salt and lots of cracked black pepper. A little brush of olive oil on the sides of the steak helps the salt and pepper stick better! This works for all cuts of beef that you’re seasoning, too!

Using a lot of cracked black pepper is a bold flavor that gives you the steak au poivre taste! If you can, change your pepper mill to a coarse grind so you get big chunks of peppercorns. If you don’t have a pepper mill, you can put some peppercorns in a zip-top bag, and use the bottom of a glass jar to smash the peppercorns. It’s the simple seasonings, y’all!!

Cooking Your Steak

While seasoning your steak is important, knowing how to properly cook your steak might be the most important part!

Before you sear or grill your steak, and if it’s been in a marinade or “setting” in a dry rub, be sure to pat the steak with a paper towel to remove any excess moisture. You might feel like you’re taking all the flavor off, but you’re not!

Just be sure to press it, don’t wipe any seasoning off.

​Also, you want to make sure your steak is close to room temperature, and not right out of the fridge.

Preheat your skillet or grill, and then sear on each side.

​Pro Tip for Grilling: When using a gas grill, set a timer to preheat your grill. You want it ripping hot, and setting a 10-minute timer helps it fully heat up, so when you lay your steak on it immediately sears.

Pro Tip for Stove Top Steaks: If you can hold your hand over the skillet for 5+ seconds, it’s not hot enough. Let it sit there longer!

Cooking a steak is easier than you might think! Lay it down, and don’t touch it. If you are grilling, give it 2 minutes, then rotate 45 degrees, and set a timer for another 2 minutes.

​Searing your steak in a hot skillet, set a timer for 4 minutes.

​Once your timer is finished, turn your steak over. Let it cook on the other side until your favorite temperature is reached. I love using this Meater Bluetooth-enabled meat thermometer. It will help you cook the perfect steak every time.

Description

Ingredients

  • 1/2 cup Worcestershire Sauce
  • 1/2 cup Soy Sauce
  • 1/2 cup lemon juice
  • 1 TBS Montreal Steak Seasoning

Instructions

  1. In an airtight container large enough to hold your steaks (it’s okay if they overlap!), mix all the ingredients together. Place steaks in the container, and turn over and over to coat well.
  2. Allow to marinate for 4 hours.
  3. Grill or cook steak as you usually would.
