Ingredients
Crust
- 1 cup all-purpose flour
- 1 cup pecans finely chopped
- 1/2 cup butter softened
Cream Cheese Filling
- 2 8-ounce packages cream cheese softened
- 11/2 cup confectioners’ sugar or sweetener of choice
- 24 ounce Cool Whip Use 12ounces in cream cheese mixture ; Then use 12 ounces for final top layer
Chocolate Filling
- 2 1.5 ounce packages instant chocolate pudding mix or one larger box
- 2 cups milk
Optional
- Toasted chopped pecans and chocolate curls.
Instructions
Preheat oven to 350°.
In a large bowl, add flour, pecans and butter. Mix with fork or hands until crumbly. Press into bottom of a 9×13 casserole or baking dish.
Bake until golden brown, about 15 minutes. Remove to a wire rack and cool completely.
In a large mixing bowl, beat cream cheese and confectioners' sugar until smooth; then, fold in whipped topping.
Spread cream cheese mixture over crust.
Make chocolate pudding according to package directions; let stand 5 minutes.
Spread pudding over cream cheese layer.
Top with remaining Cool Whip topping. Approximately 12ounces.
Optional: If desired, top with additional pecans and chocolate curls.
