The Skordalia recipe made with mashed potatoes is one of my preferred Greek side dishes; it’s so simple to make and flavorful! Traditionally, Skordalia is served along with fried salt cod, but it is delicious also with grilled lamb, fried zucchini and eggplants, or beet salad!

  • 1.5 lb (700 g) red potatoes
  • 1 cup extra-virgin olive oil
  • 5 tbsp white wine vinegar
  • 6 to 8 cloves garlic
  • 1 tsp rock salt
  • to taste table salt (optional)

WHAT IS SKORDALIA?

This tasty Greek appetizer or side is traditionally made in different ways. The main ingredients are olive oil, and white vinegar, and especially garlic (called in Greek Skordo).

In the authentic Greek recipe, the flavor of raw garlic is predominant, and this can be tough for someone; so feel you free to adjust the quantity according to your preferences.

Skordalia recipe can be made with potatoes, or stale bread and dried fruit like walnuts and almonds.

Another version of this recipe requires white beans.

Commonly, the Skordalia prepared with potatoes is a thick puree; otherwise, the version with bread and dried fruit is smooth and spreadable.

POTATOES SKORDALIA RECIPE

First of all, pour the skin-on potatoes into a pot along with 5 qt of room temperature water, and place over high heat.

Cook potatoes until well done but still firm, about 30 to 40 minutes after the water starts to boil.

GREEK GARLIC SAUCE

Waiting for the potatoes, peel the cloves of garlic and pestle into a mortar along with the rock salt and white pepper.

When the garlic paste is consistent, add the olive oil and vinegar a little at a time, continuing to mash.

GARLIC MASHED POTATOES

Once ready, peel the potatoes and save 1 cup of cooking water.

Mash the potatoes in the mortar, one at a time, adding a few tbsp of cooking water and garlic sauce a little at a time.

Finally, combine the mixture in a bowl and whisk until consistent.

Serve these healthy mashed potatoes cold or at room temperature, paired with fried fish, grilled meats, fried vegetables, or just with toasted on pita bread!
