Mojitos are one of the first co*cktails that I got into and it's an appreciation that has endured. There's something about that gently sweet-fresh combination of lime, mint and a little sugar that works so well. While I love the original, I also enjoy a few variations like my bright and fruity watermelon mojito and slightly sharp ginger mojito.

This champagne version is another delicious one to add to the list. It's also perfect for occasions when you want something that little bit special, but without being a brunch-like sparkling co*cktail (much as bellinis etc are good, but you know what I mean).

It's a simple swap of the bubbles that you add, but you can definitely taste the difference. The champagne adds an extra layer of flavor that pairs really well. It makes the co*cktail rounder (and of course a little stronger).

Perfect for batch preparation

While here I just made a single glass, this is also an easy drink to make in batches, so I have describes that in the notes below, too. You don't want to add the champagne until the end, as the bubbles will disappear, but you can prepare the base ahead.

Just squeeze plenty of lime juice, make a batch of simple syrup and combine both with mint. You can muddle the mixture in a pitcher rather than individual glasses, then add the rum and mix.

You can make this base mix ahead and the mint will just infuse a bit more over time. Don't make it more than a couple hours ahead, though, as the mint may start to spoil. And also don't add ice until serving as it will just dilute.

Then, add ice to glasses, divide the mixture between them and top up with champagne. Make sure you add the champagne last so that it both keeps it's bubbles and doesn't overflow (plus to get the right amount).

Do you need to use champagne?

While "champagne" is in the name, you can use other sparkling wines in this and it will be just as good (sorry champagne). Since you are mixing with a few other flavors, there's no need to go top of the range here. I would, however, suggest you go for something with a flavor you enjoy and also I recommend Brut (dry).

Since you are sweetening the drink anyway, a sweet wine may well be too much. Plus personally I just tend to prefer the drier sparkling wines. That said, feel free to play around with a sweeter one, probably with less simple syrup, if you prefer or that's all you have.

This champagne mojito has a wonderful fresh flavor, with that bit more complexity than the original. It's bright, bubbly and perfect for sipping on whether that's on a warm day or for a special occasion.

Ingredients

  • 6 mint leaves
  • ¾ fl oz lime juice
  • ½ fl oz simple syrup (1 part water, 1 part sugar)
  • 1 ½ fl oz white rum
  • 3 fl oz champagne approx (or other sparkling wine)

Instructions

  • Put the mint leaves, lime juice and simple syrup in the bottom of a tall (Collins) glass. Muddle them together to bruise the mint and release their oils.

  • Add some ice and the rum and gently stir. Top up the glass with champagne.

Notes

To make a larger batch for around 8 glasses - muddle approx 50 mint leaves (just the leaves, not on stems), 6oz (180ml) lime juice and 4oz (120ml) simple syrup in a jug. Add 12oz (360ml) rum and stir. Chill this mixture until needed (ideally no more than a couple hours so the mint doesn't wilt too much) Divide this base mixture between 8 glasses, each with a few pieces of ice. Top up the glasses with champagne (should use roughly the whole bottle).
