Do you ever get that spur-of-the-moment urge for something? Like wake up at 5am dreaming of crunchy, lightly-sweetened granola but know you have nine million things that have to be done before waking up the kids for school and know that waiting for oven-baked granola is just not an option?

That’s exactly how this recipe came about. There I was, groggy and half awake but already dreaming of breakfast and determined to make all my yogurt-granola parfait dreams come true. In that wake-up-and-bring-it mode I headed straight for the kitchen to make it happen.

I found my box of Kellogg’s® Special K Original cereal, some almonds, honey, and oats and made sure I had stocked up on our favorite Light & Fit® Original Greek Blueberry nonfat yogurt and got to work.

That same crunchy oven-baked magic can be replicated in a pan on the stove top. I started by melting some butter and toasting the oats and sliced almonds in the pan. When they became golden and fragrant, I added a little ground ginger and a sprinkling of salt for balance. I love the warm spiciness of ginger but you could use cinnamon or cardamom or even nutmeg. After the spice bloomed in the warm butter and coated the oats I added the honey and gave it all a quick stir. The last step is to remove the pan from the heat and add the Kellogg’s® Special K Original cerealand the dried cranberries. You want to make sure you add these last to keep the cereal from getting soggy and the cranberries from burning in the pan.

Transfer the granola to a baking sheet to cool. As it cools it will get crispy and take on that granola crunch we all love. All that’s left is to set it out on the breakfast table with Dannon Light & Fit® Original Greek Blueberry nonfat yogurt and fresh fruit for everyone to build their own yogurt parfaits just the way they like them.

Any leftover granola can be stored in an airtight container for up to a week, but it is best eaten right away. Don’t worry, this stuff is so good you won’t have any leftover anyway.

Quick Stove Top Granola + Yogurt Parfaits

Yield: 4-6 servings

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

This super simple granola recipe is made right on the stove top in under 10 minutes. Layer with Greek yogurt and fresh berries for a healthy breakfast when you need something fast.

Ingredients

For the Granola:

  • 4 tablespoons unsalted butter
  • 1 cup rolled oats
  • 1/2 cup sliced almonds
  • 1/2 teaspoon ground ginger
  • pinch salt
  • 1/4 cup honey
  • 1 cup Kellogg’s® Special K Original cereal
  • 1/2 cup dried cranberries

For the Parfait:

  • Light & Fit® Original Greek Yogurt
  • Fresh Berries

Instructions

For the Granola:

  1. Melt butter in a large frying pan over medium heat. Add oats and almonds and cook, stirring frequently until toasted, about 5 minutes.
  2. Add ginger and salt and stir to combine and let spice warm and become fragrant. Add honey and stir to coat.
  3. Remove from heat, stir in Special K and cranberries. Transfer to a baking sheet and let cool until crisp.

For the Parfait:

  1. Layer yogurt, granola, and berries in a bowl and dig in!
