They don’t fall under one specified food category but include all items that offer substantial nutrients without increasing your calorie intake significantly. The most common examples include leafy greens, nuts, soy, salmon, and berries.

How To Make Superfood Breakfast Cookies

No one appreciates the idea of standing in the kitchen for long hours when you’re already in a hurry to start the day — and that’s why we’ve made sure to keep our superfood breakfast cookies recipe super simple and quick.

  1. Preheat the oven to 350°F. Use parchment paper to line a baking tray and set it aside. You can also replace parchment paper by greasing the baking sheet with oil.
  2. Peel the bananas and mash them thoroughly. Make sure there are no chunks.
  3. Mix together the chia seeds, dried cranberries, pumpkin seeds, rolled oats, hemp seeds, and cinnamon in a medium-sized bowl.
  4. Pour out the wet mixture into the dry mixture and whisk vigorously to combine the two fully.
  5. With a cookie scoop, scoop dough onto the parchment paper. You can also moisten your fingers and flatten the dough balls a bit.
  6. Bake the cookies for about 15 minutes (or until they are golden brown).
  7. Allow the cookies to cool down on the parchment paper.
  8. The extras can be kept fresh in an airtight container for up to 1 week.

FAQs

Is it good to have cookies for breakfast?

The answer depends on the type of cookies you’re consuming. Commercially packaged cookies, for example, are not a good idea for breakfast, as they lead to blood-sugar spikes and crashes. On the other hand, healthy (and especially home-baked) options like the superfood breakfast cookies are not only a delightful breakfast idea but also nutrient-dense and healthy. In fact, they are a great alternative to unwholesome cereals and granola bars.

How many calories are in an oatmeal breakfast cookie?

An oatmeal breakfast cookie has 55 calories each on average. This means you can enjoy a cookie for breakfast without stressing about disrupting your healthy and clean eating routine.

How to store these superfood oatmeal cookies?

Superfood oatmeal cookies should be stored after they’ve been fully cooled to avoid condensation in the container, which makes the cookies soft and mushy. A few other tips include:

  • Do not mix the cookies with other cookies to avoid taste alterations.
  • Place the cookies out of direct sunlight, preferably at room temperature.

Health Benefits of Seeds

Seeds are rich in proteins, healthy fats, minerals (such as potassium and calcium), and vitamins (B1, B2, B3). Due to these high-profile nutrient characteristics, seeds reduce blood sugar levels, help maintain your weight, reduce the chances of diabetes, and lower the risk of heart disease.

Substitutes and Add-ins

Playing around with the ingredients is always a fun idea to try, test, and find what suits your tastebuds. For example, you can go for raisins or dried blueberries instead of dried cranberries. Apple puree can go as a substitute for bananas.

To make the recipe more delectable, add-ins like sliced almonds, nut butter, and vanilla extract can be included, too.
